<p>University Preparatory Theater Arts Program is proud to present live in the David Marr Auditorium, “Once Upon A Mattress” The musical will take place Nov. 20, 21 &amp; 22. The doors open at 6:30 p.m. for all performances and the show starts at 7 p.m. Admission: Adults $10 and students $5. Tickets are available in advance at the U-Prep office Village Schoolhouse Toy Store, Sugarplum Cottage Toy Store or at the door the night of the show.</p>
<p>The show has a cast of 42 students ranging from 6th grade to 12th grade. Directed by M. Romney Clements with music by Brad Fowers and choreography by Marissa Kinneavy.</p>
<p>ONCE UPON A MATTRESS is the hilarious musical story of romance in a fantasy kingdom. Queen Aggravain jealously protects her son Prince Dauntless from marrying any eligible princess, and will not allow anyone else in the kingdom to wed until her son does. When Sir Harry and Lady Larken learn they are to become parents, wed or not, Sir Harry takes matters into his own hands and goes into the swamp to search for a bride for the prince. There he discovers Princess Winnifred. The Queen is horrified and schemes to get rid of Princess “Fred,” but aided by Sir Harry and the Jester, Winnifred stakes her place in the kingdom.</p>

<p>Research the past 50 years has turned up some surprising discoveries that overturn previous assumptions about our religion, and about Jesus in particular. </p>
<p>If you stay away from church because it fails to speak to the problems of everyday life,  you might be interested in the changes that are beginning to occur.</p>
<p>Pilgrim Congregational UCC Church is searching into these findings of modern scholars to offer better ways of speaking to its community. One recent way is to take another look at the Bible’s New Testament itself – to research once again the origins of the four gospels and why only four out of approximately 50 existing gospels ended up being chosen at the time.</p>
<p><strong>Between now and the Christmas holidays</strong> we will offer a showing of a DVD series which investigates especially those gospels that were left out of the New Testament – to discern what they said, why they were omitted, and why some might be reconsidered in light of today’s world.</p>
<p>These are being shown at our church each <strong>Saturday from 10:30 a.m. to noon</strong> (they started Oct. 25) . You are cordially invited to drop by. For more information, call 243-3121.</p>

There are 23 different styles of beer and numerous subcategories.  In brewing your own beer, you can experiment with different styles and recipes. You can also modify recipes to what you think would taste good.  It&#8217;s just like cooking in that way. You can take a recipe and follow it exactly, or change some of the ingredients.  Once you make your initial investment in all the brewing equipment, home brewing is less expensive than store-bought beer.</p>
<p>There are three different methods of brewing:</p>
<p><strong>Extract</strong> - You take a malt syrup, boil it, add the hops and ferment it.</p>
<p><strong>Partial mash</strong> - This uses extract and speciality grains. Then the grains are steeped, the extract is added and it&#8217;s boiled. </p>
<p><strong>All-grain -</strong> You&#8217;ll use only grains for the mash. </p>
<p>The four basic ingredients used to make beer are water, barley, hops and yeast.</p>
<p>Here is the basic four-step process to make all grains beer.</p>
<p><strong>The mash:</strong><br />
       You take the crushed grains, and mash them (steep) in hot water, approximately 140-160 degrees. This will convert the starch to sugar.  This process takes about one hour.  Then you need to slowly rinse the grain with 170-degree water for about an hour.  The run-off goes into a brew kettle and is placed on a heat source.   This run-off (wort) is very sweet.  You boil the mash for 60-90 minutes.   ( Note: When using extract, the mashing process is eliminated because the extract is actually the run-off from the mash.  Extract will either be a thick syrup, or a dried powder.)</p>
<p><strong>The boil:<br />
</strong>       Hops are added to the boil at different times depending on the function of the hop.  Hops are used for bittering, flavor, and aroma.  (Without hops, the beer would be too sweet.) Bittering hops are added to the boil when 60 minutes remain.  Flavoring hops can be added later in the boil when 10-30 minutes remain.  Aroma hops can be added the last 10-0 minutes.  Some reasons to boil have to do with killing germs and bacteria, and extracting the hop oils.</p>
<p><strong>Fermentation:<br />
</strong>       After the boil, you need to chill the beer to approximately 70-75 degrees and put it into a fermentation vessel at which time you pitch (add) the yeast.  You ferment the beer for approximately 1 week until active fermentation stops, then you rack (transfer) to a secondary fermentation for approximately 2 weeks.</p>
<p><strong>Carbonation:</strong><br />
       After two weeks, you can bottle or keg your beer.  If you are bottling your beer, you would add sugar before bottling in order to carbonate it.  This is called bottle conditioning.  (The sugar reactivates the yeast, producing CO2.)  If you bottle condition beer, there will be some residue on the bottom of the bottle.  If you keg your beer, most people use old 5-gallon soda kegs.  You can either force carbonate it by using C02, or cask condition, which is adding sugar to your keg (similar to bottling).<br />
       If you bottle your beer, you&#8217;ll be ready to enjoy your home brew in about 2 weeks.  In force carbonation, you&#8217;ll have your beer anywhere from 2-7 days.  Cask conditioning would take approximately 2 weeks.</p>
<p><em><strong>Don Williams has been brewing beer for 5 years.  He started out brewing extract beer, then went to partial mash, and has brewed all grains for three-and-a-half years.  This is the first year he has planted his own hops.  He keeps between six to eight different styles of beer on tap.  Don belonged to a large brew club in San Diego, and hopes to be involved in starting one in the Redding area.  He is a recognized beer judge.  He will teach an all-grain brewing class on Sat., April 26 at Wine Time on Highway 273 in Anderson.  To learn more or register for the class call 365-9463 for more information.</strong></em></p>

			<content:encoded><![CDATA[<p><img style="float: left; margin: 1em 1em 0pt 0pt" src="http://donigreenberg.com/wp-content/uploads/2008/04/mojito.jpg" alt="" /> As the weather warms and the patio becomes a destination for many to enjoy some company and refreshments, the bartenders at Market St. Steakhouse start to notice some trends: Chardonnay becomes the more popular wine selection, Coronas are chosen over the heavier ales, and hands down the mixed drink of choice becomes the mojito.</p>
<p>The mojito is a traditional Cuban drink, which explains its need to be refreshing in a warmer climate. It is made with five ingredients: rum, soda water, lime, sugar, and of course, mint.</p>
<p>&#8220;Muddling&#8221; the mint is an important step for a classic mojita. It releases the mint&#8217;s flavor and essence into the drink by bruising, mashing and pressing the leaves at the bottom of a glass or pitcher, often with a wooden pestle-like tool, or a heavy spoon or fork.</p>
<p>Some mojito recipes call for granulated sugar, but at Market St. Steakhouse we use simple syrup. It is faster, more consistent and the sugar is already dissolved.</p>
<p>Before walking away from the mixing station, taste the mojito. They are tricky drinks because there are a lot of variables that can influence the flavor, such as lime sweetness, amount of mint, sugar, type of rum, and the amount of muddling.</p>
<p>The flavor can be finessed at the end with the addition of any ingredients.</p>
<p>Mojitos are best enjoyed in the sun with a great friend, many laughs (and at Market St. Steakhouse).</p>

<h2>Market St. Steakhouse Mojito</h2>
<address>Fresh mint leaves, about 12 to 15 </address>
<address>*Simple syrup, about 1 - 2 tablespoons<br />
 Rum, about 1 1/2 - 2 ounces<br />
 1 fresh lime, juiced<br />
 Ice<br />
 Soda water, chilled<strong> </strong></address>
<p>Put the mint leaves in the bottom of a pint-sized glass. Add some simple syrup. Add about a half a shot of rum.</p>
<p>Next &#8220;muddle&#8221; all of these ingredients together. The proper amount of muddling takes a little practice. It is important to release the essences of mint, but not turn it into a puree that goes easily up the straw.</p>
<p>Add the ice and the juice of the whole squeezed lime. (The lime plays a very important role and can ruin the drink if it is squeezed too hard.)</p>
<p>Fill the remaining portion of the glass with soda water and finish off with more rum, to taste.</p>
<p>Garnish with a lime wheel and a sprig of fresh mint.</p>
<p>Makes 1 mojito.</p>
